Corrales Azafrán
Carthamus tinctorius. Safflower from the village of Corrales, New Mexico. Azafrán translates as “saffron.” This unrelated red/orange thistle-like flower was used as a saffron substitute in the Spanish Colonies. (Approximately 2 Tbsp. of dried Azafran petals equals a pinch of saffron)
Keeps well as a dried flower, though flower calyxes are very prickly.

- Plant seeds with the summer rains about 1/4 inch deep.
- Plants grow 3-4 feet tall.
